Steak Bite Mashed Potatoes

Ingredients
FOR THE STEAK:
2 NY strip steaks (cut into bite sized cubes)
1 tablespoon Kosher salt
1 tablespoon Pepper
1 tablespoon Garlic powder
Neutral oil as needed
FOR THE POTATOES:
5 or 6 large Potatoes (preferably golden) (peeled)
1/2 cup Whole milk
1/2 cup Sharp cheddar cheese
4 tablespoons Unsalted butter
FOR THE PAN SAUCE:
1/2 cup Beef broth
2 tablespoons Dijon Mustard
1 1/2 tablespoons Steak sauce
1 1/2 tablespoons Champagne vinegar
1 teaspoon Worcestershire sauce
1 teaspoon Pepper
Kosher salt to taste
(Tallow for the pan)
(chopped fresh parsley for garnish)

Step by Step Instructions
  1. Heat a pot of water with 1 1/2 teaspoons of salt in to a boil. Peel and cube potatoes, then add and cook for 25 to 30 minutes.
  2. Strain the water out of the pot and mash the potatoes. Add the butter and milk a bit at a time while stirring. Add the cheese, mix it in thoroughly, then set the potatoes aside (keeping them warm) until ready for serving.
  3. Coat the steak bites in oil, then season with salt, pepper, and garlic powder.
  4. Preheat a cast iron skillet over high heat with tallow in the pan to melt. Add the steak bites and cook them for 3 minutes on each side. Remove the steak and allow it to cool.
  5. Deglaze the skillet with beef broth and scrape the bottom to remove flavorful meat bits. Add the other PAN SAUCE ingredients, stir, and let simmer for 10 minutes. Keep warm
  6. Further slice the steak if desired, then serve the mashed potatoes topped with steak and pan sauce (garnish with chopped fresh parsley if desired)
