Steak Bite Mashed Potatoes

Ingredients
FOR THE STEAK:
2
NY strip steaks (cut into bite sized cubes)
1 tablespoon
Kosher salt
1 tablespoon
Pepper
1 tablespoon
Garlic powder
Neutral oil as needed
FOR THE POTATOES:
5 or 6 large
Potatoes (preferably golden) (peeled)
1/2 cup
Whole milk
1/2 cup
Sharp cheddar cheese
4 tablespoons
Unsalted butter
FOR THE PAN SAUCE:
1/2 cup
Beef broth
2 tablespoons
Dijon Mustard
1 1/2 tablespoons
Steak sauce
1 1/2 tablespoons
Champagne vinegar
1 teaspoon
Worcestershire sauce
1 teaspoon
Pepper
Kosher salt to taste
(Tallow for the pan)
(chopped fresh parsley for garnish)
Step by Step Instructions
- Heat a pot of water with 1 1/2 teaspoons of salt in to a boil. Peel and cube potatoes, then add and cook for 25 to 30 minutes.
- Strain the water out of the pot and mash the potatoes. Add the butter and milk a bit at a time while stirring. Add the cheese, mix it in thoroughly, then set the potatoes aside (keeping them warm) until ready for serving.
- Coat the steak bites in oil, then season with salt, pepper, and garlic powder.
- Preheat a cast iron skillet over high heat with tallow in the pan to melt. Add the steak bites and cook them for 3 minutes on each side. Remove the steak and allow it to cool.
- Deglaze the skillet with beef broth and scrape the bottom to remove flavorful meat bits. Add the other PAN SAUCE ingredients, stir, and let simmer for 10 minutes. Keep warm
- Further slice the steak if desired, then serve the mashed potatoes topped with steak and pan sauce (garnish with chopped fresh parsley if desired)
